What is the secret to Pancakes?
Today I will show you two recipes that will change the way you make pancakes.Ever had pancakes that lived up to their name PAN- CAKES because they tasted just like cake? Well growing up in Nairobi, we would make pancakes, they were delicious yes, but they didn't taste like cake.
These pancakes lacked two ingredients, milk because we used water and baking powder or baking soda because we didn't know it was possible to make delicious pancakes using them. With these two pancake recipes you will be able to make pancakes that taste just like cake.
Do we need baking powder for pancakes?
You can substitute baking powder with baking soda, for the flat, fluffy pancakes. If you need them with a little bit of volume, add baking powder.
First up is the light pancakes just like the ones we made growing up, these ones are made with baking soda.

o 1/2 Cup All Purpose Flour
o 2 Tablespoon Sugar
o A pinch of Salt
o ½ Cup Milk
o ½ Cup Water
o ¼ Teaspoon Baking Soda
o 1 Teaspoon Vanilla Essence/Chocolate Essence
o 1 Egg
o 1 Tablespoon Cooking Oil

Tip of The Day
Try out chocolate essence on your pancakes, you will love it. Please note that it is strong so put a half teaspoon where you would put 1 teaspoon if it were vanilla essence.
