Growing up, Christmas used to be a big deal. As a child, there were only two important things to look forward to; the food and the outfit. If your parents got your outfit right, your friends would talk about it for the rest of the year. Let’s talk about the main meal, lunch.

I am not talking about the present breed of chicken in Nairobi. When we had chicken it would be the real deal, free range, village reared chicken, and this chicken was and is still the king/queen of every chicken species.

Chicken and chapati for lunch or chicken, chapati and rice for lunch, this was pure heaven. This was the only time of the year we had buffet, so you can imagine how excited we were at the thought of lunch on Christmas day. This chicken needed only a few ingredients to make:
